Unique Sandwiches

In a rut with the sandwiches you make? Here are a couple of great ideas.

Even if you have never had braces, you probably know that they make it very difficult to eat. It is even harder to find quick and healthy options. Most people make Turkey or BLT sandwiches, and if you’re vegetarian you might use Tofurky or veggie bacon to do the same thing.

During the time that my family was remodeling our house, we only had half of a kitchen. We were eating a lot of sandwiches. So we tried some new fillings.

 

Zucchini Grillini

Ingredients

  • Whole grain bread (Ezekiel 4.9 Organic Sprouted Whole Grain is good)
  • Zucchini
  • Carrots
  • Purple cabbage
  • Hummus

Directions

Chop the zucchini into long strips, 1/4 in. wide. Sauté until completely cooked.

Toast bread.

Peel and grate the carrots, then thinly slice the purple cabbage.

Spread hummus on the bread. Add grated carrots, purple cabbage, zucchini, and the second piece of bread.

 

Mediterranean

Ingredients

  • Whole grain bread (Ezekiel 4.9 Organic Sprouted Whole Grain is good)
  • Mediterranean Chickpea veggie burger (Morning Star works well)
  • Carrots
  • Purple cabbage
  • Tomato
  • Avocado

Directions

Cook the veggie burger in the microwave or on the stove.

Toast the bread.

Peel and grate the carrots. Then thinly slice the purple cabbage, tomato, and avocado.

Layer the avocado, carrots and purple cabbage on the bread. Crumble the veggie burger and add that as well. Put on the sliced tomato and the second piece of bread.
